The Challenge

Zander Foods needed a continuous ultra-freezing system to supply the hospitality sector, traditional commerce, and supermarket distribution, particularly for the launch of new frozen products such as burgers.

Several solutions were evaluated, including liquid nitrogen-based systems, which require a constant supply. However, aiming to reduce environmental impact and optimize operational costs, Zander Foods opted for an innovative, sustainable, and eco-friendly technology.

The Solution: Deep-Freezing System

To meet these needs, GasN2 proposed a rental-based ultra-freezing system, operating at a very low temperatures, consisting of:

  1. CT15 refrigeration unit, installed outside the company.
  2. Dynamic tunnel system (2×0.6 meters).

With this solution, a production capacity of 70 to 90 kg/h was achieved for various products. The fast cooling process is crucial to preserving the original texture of food, while the precise combination of temperature and time ensures a stable process and a high-quality thawing experience.

Results

The implementation of GasN2’s ultra-freezing system provided Zander Foods with significant advantages:

  • Cost reduction: Fixed monthly fee with no additional expenses, optimizing cost per kilogram produced.
  • Sustainability: Elimination of liquid nitrogen usage, reducing CO₂ emissions and truck transport.
  • Superior product quality: Optimal preservation of organoleptic qualities through a mechanical cooling system with no consumables.
  • Production efficiency: Same freezing performance and times as traditional liquid nitrogen-based systems.

Thanks to the efficiency of the equipment and the elimination of liquid nitrogen transportation, CO₂ emissions were reduced by 19% annually, preventing more than 6,207 kg of CO₂ emissions per year. This impact is equivalent to planting 310 trees annually, making a significant contribution to carbon footprint reduction.
